What Is IQF Diced Cabbage?

IQF diced cabbage (Individually Quick Frozen diced cabbage) is blanched and rapidly frozen so the pieces remain loose and free-flowing. IQF diced cabbage is used where labor savings, consistency, and extended shelf life are priorities. Common applications for IQF diced cabbage include stir-fry blends, Asian noodle bowls, egg roll or spring roll fillings, pot pie vegetable mixes, cabbage-heavy ethnic entrées, and soups that require bulk with a neutral flavor.

How IQF Diced Cabbage Is Produced

The production of IQF diced cabbage begins with carefully selected cabbage varieties grown specifically for processing. Seeds are started in a greenhouse until seedlings reach approximately 4–5 inches tall, then hand-planted in the field. This controlled start allows for an earlier growing cycle and helps protect the crop from disease and late winter weather fluctuations.

Once mature, the cabbage heads are harvested at peak color, taste, and nutritional value. The whole heads are transported to the processing facility where the core is removed and the cabbage is blanched. This step sanitizes the product and softens the leaf structure, ensuring the diced cabbage maintains proper texture after freezing and thawing.

During processing, leaves that do not meet the specifications for whole leaf products are directed to cutting systems that produce uniform cuts ranging from ¼ inch to 1 inch. These pieces are then conveyed into a high-efficiency freezing system where they become IQF diced cabbage, preserving quality and separation.

After freezing, IQF diced cabbage remains free-flowing and is packaged into 45 lb. cases, stacked 42 per pallet for a total of 1,890 lbs. Because the fields are located close to the processing facility, the time from harvest to finished IQF diced cabbage is measured in hours, preserving freshness and quality.
