Scoville Range & Heat Control
Heat in jalapeño peppers comes from capsaicin, an oil concentrated primarily in the placenta, or white inner ribs, and to a lesser extent the seeds. Managing heat levels is a function of capsaicin distribution and processing methods.
Because IQF jalapeños are processed at controlled industrial scale, heat levels remain consistent batch to batch. Roasting or rinsing during application can further moderate perceived heat when required for specific product formulations.
Sourcing & Harvest Standards
Mexico remains the dominant growing region for jalapeño peppers, with additional seasonal production in California, Arizona, and New Mexico.
Jalapeños are harvested at peak ripeness to ensure optimal flavor and color. Unlike mechanically harvested bell peppers, jalapeños are hand-picked to preserve plant integrity and product quality.
Blanching & Color Stability
All IQF jalapeño peppers undergo blanching prior to cutting and freezing.
This serves two critical functions:

-Deactivation of catalase, a natural enzyme that can cause green peppers to shift toward darker red tones over time
Blanching ensures stable color retention and product safety throughout frozen storage.
Individually Quick Frozen Quality
After cutting to specification, jalapeños undergo Individually Quick Frozen processing. Rapid freezing preserves cell structure, flavor integrity, and capsaicin stability while keeping the product free-flowing for accurate portioning.
There are no additives or preservatives. Operators can move directly from frozen to finished product without additional trimming or prep.
